1 large head of raw cauliflower1 small onion (about 1/2 c.if you want to chop it)1/4 cup lo-fat cream cheese2 tablespoons Smart Balance buttery spread1 chicken bouillon cube or a tsp. of the granulesSalt & pepper to taste
Cook the cauliflower, bullion cube and onion till soft in as little water as possible. Using a food processor, process the cauliflower, onion, cream cheese and margarine, adding as much of the cooking water as needed to make it the consistency of mashed potatoes. Add salt and freshly ground pepper. Serve as a substitute for mashed potatoes or as its own delicious dish.

The number of servings is 5, divide into the total calories of 550 and you get 110 calories per serving. Not sure how this happened and do not know how to correct it - so you have to do a little Math on your tracker.
