Quinoa w. Tempeh & Grilled Veggies

Ingredients
- 0.5 c Quinoa, prepared- 80 g Tempeh, cubed- 1 Crimini Mushroom, sliced- 50 g Mixed Bell Peppers, diced- 2 tbsp Soy Sauce- 1 tbsp Cider Vinegar- 1 tbsp Onion- 1 tbsp Light Feta Cheese- pepper to taste
Directions
heat skillet on high, add onions, mushroom, then add tempeh and peppers. Add half the soy sauce and vinegar to the skillet, stir fry.

when done mix the veggies and tempeh with quinoa. add the rest of the soy sauce and vinegar, mix well. top with feta cheese and pepper to taste
