1c. dry quinoa, prepared2 lemons, juice of.25c olive oil (or slightly less, to taste)pinch kosher saltfresh cracked pepper1 bunch fresh parsley, minced1 bunch fresh mint, minced1 bunch scallions, chopped1 cucumber, peeled, seeded, diced2 tomatoes, peeled, seeded, diced
Prepare quinoa: add 1c. dry grain to 2c. water, boil 12-15 minutes until all water is absorbed. set aside to cool uncovered. In a large bowl, combine lemon juice, olive oil, salt, pepper, cucumber, tomato, scallions, parsley and mint. Add cooked cooled quinoa and toss gently to combine. Chill and serve.
