Summer Melon Salad

Ingredients
1 Tbsp minced ginger3 green onions, chopped to the top2 Tbsp extra virgin olive oil1 Tbsp apple cider vinegar1 lemon, juiced1 Tbsp honey1 tsp sea salt1 bag just lettuce salad mix1/4 cantaloupe, peeled deseeded and cubed1/4 honeydew melon, peeled, deseeded and cubed1/2 cup roughly chopped fresh cilantroPinch of sea saltFresh black pepper to taste
Directions
In a salad bowl, mix ginger and onions with olive oil, vinegar, lemon juice, honey and sea salt. Allow to stand for 5 minutes or longer to develop flavor. Toss in the lettuce and melon and toss to coat. Sprinkle on the cilantro and season with salt and pepper to taste.
