Oatmeal Chocolate Chip Cookie Renovation

Ingredients
1/2 cup light margarine1/3 cup unsweetened applesauce2/3 cup packed brown sugar1/3 cup white sugar2 large eggs1 tsp vanilla extract1 cup all-purpose flour1/4 cup ground flax seed meal1/4 cup wheat germ1 tsp baking soda1 tsp ground cinnamon1/2 tsp salt3 cups quick cooking oats1/2 cup chocolate chips1/2 cup dried cranberries (sweetened)
Directions
Preheat oven to 350.

In a large bowl, beat margarine, applesauce and sugars until creamy. Add eggs and vanilla, beat well.

In another bowl combine flour, flax, wheat germ, baking soda, cinnamon and salt. Mix well.

Mix wet and dry together well. Stir in oats, cranberries and chocolate chips.

Drop batter by rounded tablespoonfuls onto parchment covered cookie sheets at least 1" apart (about 12 per sheet). Bake 8 minutes until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack and cool completely. Store tightly covered.

*48 cookies is a lot - but they freeze well so I usually freeze half. This also helps to stretch out the batch over 2 weeks.

    you can also eliminate some calories by replacing the brown sugar with apple butter. at only 29 calories per spoonful. - 7/26/17
