Thai Seafood Noodle Salad

100g fine rice noodles (cooked as per pack instructions and allowed to cool)1/2 clove garlic, grated or crushed2 tbsp fish sauce1 tbsp lime juice2 tsps peanut oil2 spring onions, sliced thinly1/4 cup coarsely chopped coriander leaf1 red bird eye (thai) chilli, finely chopped500g ish of cooked seafood (I used a mixture of prawns and scallops, fried off in oil and butter)
Whisk the garlic, fish sauce, lime juice and oil in a large bowl.
Add the cold noodles, onion, coriander, chilli and seafood and toss gently.
Chill if time.
You can add a tbsp or 2 of chopped peanuts if you fancy
Serving Size: Serves 2 as a light lunch or starter
