Apple Cherry Rhubarb Crisp

Filling:3 Granny Smith apples, peeled, cored & roughly chopped5 Stalks Rhubarb roughly chopped into 1/2 inch pieces1/2 Cup Cherries, pitted and halfed.1/4 Cup Apple Juice1/4 TSP Nutmeg3 TBSP Whole Wheat Flour1/2 Cup SplendaTopping:1 cup quick oats1 tsp vanilla1/2 tsp cinnamon1/4 cup brown sugar2 Tbsp heart-healthy margarineOptional:2 TBSP Raw sugar granules to sprinkle over after baking!
1.) Prep fruit.
2.) Get large mixing bowl. & Preheat oven to 350 F
3.) Add fruit, nutmeg, apple juice, splenda, and whole wheat flour to bowl and mix well.
4.) In medium sized bowl add oats, vanilla, cinnamon, brown sugar, and margarine and mix until crumbly.
5.) Place fruit in 9 x 13 pan sprayed with nonstick spray.
6.) Evenly distribute topping over fruit.
7.) Bake @ 350 until fruit is soft and bubbly.
8.) OPTIONAL: Sprinkle 2 TBSP of raw sugar over the top after baking!
9.) ENJOY!
