Spinach Mashed Potatoes

Ingredients
2 1/2 c Fresh Spinach6 potatoes, peeled & chopped3 tbsp butter substitute1 c reduced fat sour cream1 tbsp chopped onion1 tsp salt1/4 dill, dried
Directions
Preheat over to 350
Sautee spinach with onions until cooked through
Place potatoes in a pot, covered with water, and bring to a boil. Cook 15 min until tender, but firm.
Drain, cool slightly and mash.
Mix all ingredients together in a bowl and transfer to greased casserole dish.
Bake 20 min. Optional to top with cheese - cook until bubbly & slightly brown.
