gluten-free vanilla cinnamon tea cakes

Ingredients
130 g (1 C) rice flour1/2 tsp baking powder1/2 tsp salt3 Tbsp sugar (brown, cassonade)1/4 tsp cinnamon1 egg, beaten1/4 tsp vanilla extract1/2 C water
Directions
mix dry ingredients & wet ingredients separately;
add wet ingredients to dry & mix (will be a bit runny)
spoon into small muffin tray, lined with coconut oil (or other)
bake 8 minutes, check
when the tops start to "crack", bake 2 minutes more
(*note: they will not brown)
Let cool & enjoy with jam, jelly, honey, or nothing at all!
