Sun Dried Tomato Pesto

4 oz sun dried tomatoes2 Tbsp fresh basil2 Tbsp fresh parsley1 Tbsp chopped garlic1/4 cup pine nuts3 Tbsp chopped onion1/4 cup balsamic vinegar1 Tbsp tomato paste1/3 cup crushed tomatoes1/4 cup red wine vinegar1/2 cup olive oil1/2 cup grated parmesan cheese
1. Place sun-dried tomatoes in a bowl and cover with hot water for 5 minutes or until tender.
2. In a food processor, combine sundried tomatoes, basil, parsley, garlic, onion and pine nuts. Process until well blended. Add vinegars, tomato paste and crushed tomatoes, process. Stir in olive oil and sheese. Season with salt to taste.
