Simple Potato Salad

2 1/2 lbs of red potatoes, washed and cubed1 cup of Smart Balance Omega Plus Mayo1/2 cup chopped onionsSea Salt to taste4 hard boiled eggs, chopped1 1/2 dill pickles, chopped freshly ground pepper to taste
Place the potatoes in a large pot with enough water to cover. Bring to a boile, and cook for about 10 minutes or until tender.
Drain and place in a serving bowl.
Stir in Onions, salt and pepper while potatoes are still hot. It allows the potatoes to absorb the flavor.
Set aside for 20 minutes to cool.
Add mayonaise and mustard to the potatoes and mix well. Gently stir in eggs and dill pickles.
Finish off with a generous grinding of pepper on the top.
Cover and chill for 30 minutes before serving.
Serving Size: Makes about 10 servings.
