Cranberry Sweet Bread

2 egg whites1 cup milk1/4 cup brown sugar1/2 cup apple sauce14 cup ground flax seed1 cup all purpose flour1/2 cup whole wheat flour1/2 cup soy four2 tsp baking powder1/2 tsp baking soda1 cup coursely chopped cranberries
Beat egg whites, milk, sugar, and apple sauce with electric mixer. Sift and add flours, flax seed, baking powder and baking soda into the beaten liquid ingredients. Mix well. Add cranberries and stir by hand just to get them well distributed.
Pour into a non-stick or sprayed loaf pan. Bake at 375 degrees F for about 45 minutes or until done.
Can be served either as a bread or as a dessert topped with whipped cream or yogurt.
