1/2 lb. beef short ribs.1 Oriental/Daikon radish, medium sized, chopped into bite sized pieces.1 white onion, medium sized, chopped into bite sized pieces.2 tsp minced garlic. 1 tsp salt.1 cup chopped leek.6 cups water.
Combine beef short ribs, water and salt. Bring to a boil. Simmer 10 minutes. Add chopped radish. Simmer 10 minutes. Add chopped onion, minced garlic and chopped leek. Simmer 10 min.
Serve with rice.
If you wish to prepare in advance, you can cool the soup and skim the excess fat off after an hour in the refrigerator.
