Breakfast Egg Bake

Ingredients
2 cups frozen hash browns1 bunch fresh spinach, washed and chopped8 breakfast pork sausage links12 eggs2 cups half and half1 cup cheese, grated
Directions
Butter or spray an 8" by 12" baking pan
Spread frozen hash browns in the pan
Lightly Steam spinach and layer over the hash browns
Brown pork sausages,cut into bite size chunks and sprinkle over spinach
Beat eggs with half and half. Pour over the above.
Top with grated cheese

Bake uncovered for 45-50 min. or until set and browned.

Cool, cut into 12 portions. Wrap individually and freeze. These can be popped into the microwave for a protein rich, balanced breakfast when you are on the run.
