Chocolate Espresso Biscotti

2 cups white flour1/3 cup unsweetened cocoa powder2 1/2 tbsp ground coffee2 tsp baking powder3/4 tsp ground cinnamon1/4 tsp salt1 cup sugar2 large eggs3 tbsp strong brewed coffee1 1/2 tsp vanilla extract
Preheat oven to 350. In a bowl of an electric mixer, combine flour, cocoa, ground coffee, baking powder, cinnamon and salt. In a seperate bowl, combine sugar, eggs, brewed coffee, and vanilla. Add the sugar mixture to flour mixture and beat on low speed. Divide dough into 2. On a lightly floured surface, use the palms of your hands to shape each half into a log about 15" x 1 3/4" x 1" high. Transfer the logs to greased baking sheet and pat down tops unti each piece is about 3/4" high and 2" wide. Bake until the logs are firm, about 20-25 minutes. Insert toothpick and make sure it comes out clean. Transfer logs to cutting board and let cool for 10 minutes. With a serrated knife, cut crosswize into 1/2 inch slices. (42 total) Arrange cookies in a single layer on baking sheet. Lower the oven to 300 and bake for 12 minutes per side, turning once. Transfer to wire rack and Enjoy!
