Baked Salmon w/ Dill & Sour Cream Dressing

Ingredients
4 fresh salmon filets (3-4 oz/each)1/2 C sour cream or plain whole milk yogurt1/2 C mayonnaiseJuice from 1/2 fresh lemon (save rind)1/2 C Fresh dill (snip into fine thread w/ scissors) salt & pepper to taste
Directions
Using 8x10 roasting pan:

Pre heat oven to 400 degrees & spray pan w/ olive oil
1. Mix all ingredients except salmon in a small mixing bowl
2. Place filets in roasting pan and brush dill/sour cream dressing on upper half of filet generously
3. Cut lemon rind into slivers a place around filets
4. Bake 20-30 minutes, depending on thickness of Filets.
5. Serve hot & enjoy!
