Zucchini "Pizzas"

Ingredients
7 ounces Queso cheese (a Mexican cheese. Can also use mozzarella) (7 Proteins)5 ounces sharp cheddar, 2% and shredded (5 Proteins)Maybe a teaspoon Pizza seasoning (1 teaspoon EACH rosemary powder, oregano powder, onion powder, garlic powder – Mixed well!)3 medium zucchini12 pieces Canadian Bacon (2 and ½ = 1 protein, therefore, this amount is approximately 5 proteins) sliced in half.
Directions
Slice zucchini into slices about ¼ inch thick. Salt. Let sit to “weep” for 30-45 minutes. Rinse salt off, pat dry.

After zucchini is prepared:

Preheat oven to 400 degrees Fahrenheit.

On oiled baking sheet (I use a Pampered Chef stone) lay out the slices of zucchini.
Sprinkle with pizza seasoning.
Layer on Canadian bacon (sliced in half and then laid so fits the zucchini slices) – use 2 halves, caso cheese, and cheddar cheese. Sprinkle with pizza seasoning.

Bake for 15 minutes until eggplant and zucchini are soft, and cheeses are browned. Makes 6 servings. I counted these as 3 proteins and 1 veggie.


ALTERNATIVES – Changes protein and veggie count:

Can use pepperoni instead of Canadian bacon. Pepperoni would go on top.

Can sprinkle with Parmesan cheese before layer on bacon or cheese.

Can add a thin slice of tomato (ROMA is best) between base and cheese. If use tomatoes, can use eggplant as base. Without tomatoes, I think the eggplant has an unpleasant aftertaste.

Can use fresh spices.

Can use chicken chunks instead of bacon – would go on top of the cheeses.
