Ingredients
Ground Turkey, 1 lb Bread, whole wheat sandwich, 1 slice Milk, 2%, 4 fl oz Parmesan Cheese 2 3/4 tbsp Canned Tomatoes, 2 cans (14.5 oz), diced or crushed Onions, raw, large, chopped Garlic, 2 clove, minced Egg, fresh, 1 large Salt, 1/2 tsp Spaghetti, cooked (pasta), 3 cup Olive Oil, 1 tbsp Spices, dried basil or oregano, to taste
Directions
Mix milk and torn sandwich bread to make a panade, let sit 5 minutes to moisten bread thoroughly. Add egg and parmesan cheese and mix well. Add ground turkey and your choice of 2 tsp dried basil or oregano, mix by hand. Form small meatballs with your fingers, let rest in fridge to set. Heat olive oil in large skillet on medium high until just about smoking point, add meatballs and brown on all sides, turning several times, about 5 minutes. Remove meatballs to a bowl and cover with foil. Add chopped onion and salt to skillet, cook just until softened, about 5 minutes. Add garlic and cook 30 seconds until fragrant. Add 2 cans diced or crushed tomatoes, scraping browned bits off the bottom of the skillet. Add meatballs and any liquid in the bowl back to the skillet, turn the heat to medium, and cover. Simmer, covered, for 20 minutes or until the meatballs are cooked throughout. Serve over 1/2 cup spaghetti noodles with a green salad, and season with dried basil or oregano to taste.
