Slow Cooker Crawfish Gumbo

1 c. finely shopped onion7 c. water1 1/2 c. sliced okra1/2 c. diced bell pepper1/4 c. chopped parsley1/2 c. celery leaves & inner celery stalks8 cloves garlic4 tsp. Old Bay reduced sodium seasonings1 can diced tomatoes (undrained)12 oz. cooked crawfish tail meat14 oz. chopped cooked shrimp (can substitute lump crabmeat)1/8 c. cornstarch
Place all items up to and including the tomatoes into a large crock pot set on high. Cover and cook for 4 hours. Add crawfish and shrimp and cook for another 30-45 minutes. Mix cornstarch with a little water and add to gumbo to thicken. Cooking can be slowed down with the crock pot set on low.
Serve alone or over rice.
NOTE: I try to cook very low sodium, so you may want to add more salt or Old Bay to taste.
