Bee's Pumpkin Peanut Butter Cake

Ingredients
1 C Pumpkin3/4 C Smooth or Chunky Peanut Butter4 Large Eggs3/4 C Water1 C Vegetable Oil3 1/2 C Flour3 C Sugar2 t Baking Soda1 1/2 t Salt1 T Cinnamon1 T Nutmeg
Directions
Conbine Sugar, Pumpkin, Eggs, Oil and water and Peanut butter. Put in bowl and beat well.

Combine the dry ingredients and add gradually to the pumpkin mixture. Mix well.

Pour into greased and floured bunt pan.

Bake at 350 for 60-70 minutes or until toothpick comes out clean.

Cool 10 minutes before you take out of pan.

    This is very good! I subbed fat free plain yogurt for the oil, used reduced fat p.b., Splenda blend & white whole wheat flour - it lowered the calories AND got bigger portions (1/36 is tiny!). It was still moist and yummy. Will make again! - 3/13/11
