Carrot cake porridge

Half a cup of porridge oatsHalf a cup of low-fat milkHalf a cup of waterI finely grated carrot1 tablespoon of raisins1 teaspoon of vanilla extract1 teaspoon of cinnamonHalf a teaspoon of ground ginger1 tablespoon of chopped walnutsI tablespoon of brown sugar (muscavado is my favourite for this)
Mix together the oats, milk, water, grated carrot, raisins, vanilla, cinnamon and ginger in a saucepan.
Bring almost to the boil but don't allow to boil. Reduce it a simmer and leave for 7 to 8 minutes, stirring every minute or so. Keep an eye on it in case it needs another drop of water.
Stir in the sugar and top with walnuts.
Serving Size: Serves 1
