fresh and minty summer soup

Ingredients
1 onion, chopped1 clove garlic, chopped2 tblsp olive oil1 pint skimmed milk2 carrots, peeled and chopped small1 large potato, peeled and chopped into small chunks100g frozen or fresh broad beanshandful fresh or frozen green beans4 tblsp fresh or frozen peas6-8 florets brocolli, chopped2 tblsp fresh parsley4 tblsp fresh mintseasoning
Directions
gently fry garlic and onion in oil, add carrots, and all other fresh veg and potato. stir and sweat with lid on for a few minutes. boil kettle, and add just enough water to cover the veg, replace lid and cook until veg soft. add milk, herbs, any frozen veg if using, and bring back to boil. simmer until all soft, and mash very gently. adjust seasoning and serve.
