Veggie-Cheese Sandwiches

Ingredients
8 slices French sandwich bread (I used Colombo)4 tsp. extra virgin olive oil2 Tbsp. dijon mustard4 oz. 2% cheddar cheese, cut into 16 slices1 thinly sliced small zucchini1/2 cup fresh spinach leaves1/4 cup thinly sliced sweet onion
Directions
Split bread into 4 sandwiches. Spread 1-1/2 tsp. mustard on inside of each slice. Top mustard on one slice of each sandwich with 4 slices of cheese, 1/4 of the zucchini, 1/8 cup spinach, and 1 Tbsp. onion. Top with remaining bread slices (mustard side facing in). Brush outside of each sandwich with 1 tsp. olive oil (1/2 tsp. per side).

Preheat large pan on stove over medium-low to medium heat, depending on your stove. Place sandwiches in pan. Turn sandwiches after about 4 minutes, or when golden. Cook other side about 4 minutes more, or until golden.

Serve immediately. Serves 4.
