Salsa Shrimp

Ingredients
2 Tbsp olive oil2 cloves garlic1/4 cup shallots1 jar (380 ml) bruschetta mix1 cup salsa2 Tbsp lime juice1 lb shrimp (shelled)
Directions
In a large skillet, saute shallots and garlic for 3-4 mins. Add bruschetta mix, salsa, lim juice and shrimp. Cook until they turn pink (approx 10 mins)

Makes 8 servings of 5 ounces - serve over 3/4 cup of basmati rice (included in nutritional info)
