Coffee cake (w/splenda)

1/4 cup canola oil1 egg1/2 cup 2% milk1 1/2 cup flour3/4 cup splenda 2 tsp baking powder1/4 tsp salt1 recipe toppingrecipe topping:2 tbsp splenda brown sugar1 tbsp smart balance butter spread1 tbsp wheat flour1 tsp cinnamon
9x9 pan

mix all ingredients together except for the recipe topping.
melt butter then mix recipe topping in separate bowl.
spray pan with pam then pour half the batter into pan. sprinkle batter with 1/2 recipe topping. Spread remaining batter then top with recipe topping again.
You can double the recipe to bake in a 13x9 pan. I do this often.
bake 25 min or until top is light brown and center is cooked.
