Microwave Hollandaise Sauce

Ingredients
1/4 cup Fat free half and half1/4 cup Unsalted Butter 2 Egg Yolks1 tbsp Lemon juice1/2 teaspoon dry mustard1/4 tsp Salt
Directions
Melt button in 2 cup glass measure cup.

In a medium bowl beat egg yolks with whisk. Add half & half and lemon juice to egg yolks, continue to beat with whisk.

Slowly drizzle half of the melted butter into bowl while whisking to temper egg yolks. Then add all contents of bowl to remaining melted butter in mearsuring cup while whisking in measureing cup.

Add dry mustard and salt to measuring cup, whisking to combine.

Microwave for 1 to 1.5 minutes, whisking every 15 seconds, until thick but not curdled. If curdling does occur add a small ice cube and whisk.

Serving Size: Makes enough sauce to cover 4 eggs benedicts
