Sweet Potato Casserole

Ingredients
Casserole:40 oz. can sweet potatoes1/2 cup sugar1/2 cup skim milk2 eggs beaten1 tsp salt1/3 stick butter1 tbsp vanilla extractTopping:1/2 cup brown sugar1/2 cup flour1 cup pecans1/2 cup melted butter
Directions
Mash sweet potatoes in large bowl. Mix sugar, milk, eggs, salt, 1/3 stick butter, & vanilla extract in separate bowl, then add to sweet potatoes and stir well. Pour into greased casserole dish.

Mix topping ingredients together in bowl and spread on top of casserole.

Bake 35 minutes at 350 degrees.

Makes 20 servings.
