Vegetable Lo Mein

8 oz spaghetti1/4 cup vegetable oil2 cups mushrooms (opt)1 onion2 cloves garlic minced1 tbsp cornstarch1 cup chicken broth1/2 cup bell pepper1/4 cup hoisin sauce2 tablespoons honey1 tablespoon soy sauce1 teaspoon grated ginger1/4 teaspoon curry powder
boil pasta til al dente
heat oil in large wok or saute pan. Stir fry mushrooms, carrots, peppers, onion and garlic until tender. mix cornstarch and broth in small bowl. add to stir fry. stir in hoisin sauce, honey, soy sauce, ginger, and curry powder. cook until thickened and bubbly. add cooked spaghetti and toss.
