Ingredients
1lb Pork loin (boneless)4 cloves garlic 1 Onions sliced1 cup low sodium Chicken BrothPinch Kosher Salt1 tsp black pepper1/2 tsp Paprika2 tsp Dijon Mustard
Directions
Preheat oven to 325 F.

Remove Layer of fat from pork BUT DO NOT DISCARD!!

Poke meat with a sharp knife a dozen times or so.

Slice garlic into spears. Insert garlic speers deep into meat.

Slice onions into thick slices. Spread slices in bottom of backing dish (keep one aside). These will act as a support of the meat while it cooks. Place meat on the onions.

Salt, Pepper and Paprika the meat (yes, I have turned Paprika into a verb). Place the remaining onion slice on the top of the meat, now Place layer of fat you had cut off earlier on to of the meat. Of course, this is optional, but boy does it add a lot of flavour, and the fact that it's already removed from the meat ensure that you won't actually be eating it when its all ready (unless, of course, you want to).
mix broth and dijon together.
Add the broth mix to the roasting pan.
Place in oven, uncovered for approximately 1 hour.

Remove when ready and tent for 10 minutes.

Slice into medallions.

Enjoy.

I also cooked this in a baking bag and it turned out delicious! I added my own spices as well. My family enjoys their meats a little more spicy. This recipe is a keeper. - 6/24/08

This was good! I had a huge pork loin and didn't know what to do with it and found this recipe. Everyone liked it. I also made a gravy from the pan drippings (defatted it in a separator) and poured on top. Very tasty. - 10/5/09

I really didn't like it. I thought it would be really good especially with the garlic chopped up and added in. I was very dissapointed and will not be making it again. - 1/3/11

I enjoyed this recipe but I ended up having to put the oven up to 350 because the size of the loin I had was bigger than this recipe. I used the sauce to make a gravy with mushrooms. I will try this again ! - 5/2/13

Wow this was fantastic! I made it with a 1.25lb pork tenderloin and used italian herb blend in place of the paprika (which I was out of). So moist and tasty! - 2/11/10

This is soooo easy and tastes sooooo good. My family devoured it! I made sides of roasted fingerling potatoes and chopped sweet potates along with swiss chard. This recipe is a definite keeper! - 1/13/10

I really enjoyed this pork loin. I tweaked it a little by cooking it in a cooking bag and then adding a little flour to the gravy to thicken it up. It turned out very moist. - 2/20/08
