Self crust sweet potato pie

1 can evap. fat-free milk2 eggs2 large sweet potatoes, baked, skin removed (enough for 2 cups mashed)1/2 c. sugar1/2 c. brown rice flour1 tsp. cinnamon1/2 tsp. ginger1/2 tsp. nutmeg1/2 tsp. salt2 tsp. baking powder
Mix milk, eggs, sweet potato until pureed. Add sugar flour, spices, salt, and baking powder. Blend slightly until mixed. Pour into large greased pie pan. Bake 1 hour. Makes own crust.
