Mitch's Thai Drunken Chicken Stir Fry

Ingredients
Brown Rice, cooked1 t. peanut oil2 6 oz chicken breasts cut in strips1 Pack Bird's Eye Brocolli Stir Fry Vegetables1 Medium Onion choppedBaby Carrots - julienne 6 oz2 Cloves GarlicSauce1/2 c. Chicken Broth4 T. Soy Sauce2 t. corn starch2 T. Bourbon4 T. Sweet Chili Sauce
Directions
Brown chicken in peanut oil. Set aside. Brown carrotts, onions and garlic. Add Stir Fry Vegetables and cook over medium heat until hot.

Make sauce in medium bowl: Stir together chicken broth, soy sauce, corn starch and bourbon.

Add sauce to vegetable mixture and cook over medium high heat til bubbly. Add Sweet Chili Sauce and chicken. Stir til bubbly hot and serve over brown rice.

Serving Size: 1 Cup each rice and vegetable mixture
