Mexican Red Lentil Soup

1 cup red lentils1 ea. onion, finely chopped1 cup finely chopped celery1 lg clove garlic, pressed1/4 tsp turmeric1 tsp chili powder1 tsp ground cumin1 can petite diced tomatoes (14 oz)2 cups chicken or vegetable broth1 ea. lime, juice of1 cup chopped cilantro1-2 tsp hot saucesalt and pepper to taste
Rinse red lentils. Bring to a boil in 2 cups of water. Remove from heat, cover, and let lentils sit in hot water while you prepare the rest of the dish.
Sweat onions and celery. Add garlic, cook 1-2 min, then add spices and cook to incorporate. Add lentils with their water, the broth and tomatoes. Simmer until lentils are textured to your preference. (Red lentils overcook to mush very easily.)
Season to taste, add lime juice and cilantro and serve hot.
Supposed to freeze well.
