Carrot and Mushroom Loaf

Ingredients
1 onion2 cloves garlic2 tbsp oil200g mushrooms1 tsp basil1/4 tsp thyme1/2 tsp saltpepper400g grated carrot100g oats50g cheese5 floz milk2 eggs
Directions
Chop onion and garlic and fry in oil till onion is soft. Add the sliced mushrooms and cook till softened. Transfer onions and mushrooms to a bowl and add other ingredients reserving a few oats ond some cheese. Mix well and put in a loaf tin. Sprinkle with remaining oats and cheese. Cover with foil and bake for 60 mins at 180C, remove foil half way through.
