Dark Chocolate Coconut Granola Bars

Dry:2 C rolled oats½ C whole wheat pastry flour (or regular flour)¼ C shredded unsweetened coconut¼ C dark chocolate chips (or dried fruit)¼ C sugar2 tsp. cinnamon½ tsp. saltWet:1 & ½ C skim (or low fat) milk1 egg1 tsp. vanilla
Preheat oven to 375.
In two separate bowls, mix dry ingredients, then wet ingredients. Pour wet into dry, mixing until combined. Pour batter into a cooking-sprayed baking dish (I used 13x9, made it easy to get 18 proper-sized bars). Sprinkle a little extra coconut on top for extra yum.
Bake 30 minutes. Cut into 18 bars and cool on cooling rack.
