Cheesey Dijon Mashed Potato

Ingredients
Red Potato, 2 Lbs un pealed and cut into 1-2 inch cubesYogurt Nonfat Plain, 8 oz Kraft Velveeta reduced fat with 2% milk, 8 oz Cut into 1 inch cubes Grated Parmesan Cheese, 1/3 cupOrganic Beef Broth, 1 cup, .5 cup Dijon Mustard , 2 Tbsp
Directions
Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but still firm, about 10 minutes. Drain, and return to pot. Combine Velveeta with warm potatoes to melt the cheese. Add remaining ingredients. Mash together until reaches desired consistency. Serving Size: 8
