Squash salad hot or cold

Ingredients
EggplantCucumbersBell pepperonionolive oilvinegarpesto
Directions
put 1 T oil in skillet and saute veggies until soft, and/or browned
Mix red wine vinegar or cider vinegar with pesto, slowly at 1.5 T oil and mix. Toss in with vegetables. Can also add parmesan.
