Zucchini Pie

2-3 Zucchini, depending on size2 T. olive oilGarlic powder, to taste1 package low fat crescent rolls1/2 C. liquid egg substitute8 oz. Monterey Jack cheese, cut into large cubes
Heat olive oil in large skillet over medium high heat.
Slice or cut zucchini into large cubes, and add to skillet. Sprinkle with garlic powder. Saute until zucchini is soft and beginning to brown.
Make a crust by spreading the crescent rolls evenly on bottom and up the sides of pie pan.
Add cooked zucchini to pan. Pour eggs over evenly over top. Add cheese.
Bake 45 minutes in a preheated 350 degree oven, or until cheese is melted and golden.
TIPS:
* Place foil, cookie sheet, or pizza stone under pan while baking.
* Substitute pepper jack cheese for part or all of the monterey jack cheese.
* Substitute yellow squash for part or all of the zucchini.
* Add mushrooms, black olives, bell peppers.
