Portuguese Cod Fish Casserole

Ingredients
2 pounds cod filets5 large red potatoes, sliced3 large onions, sliced3/4 cup extra virgin olive oil1 Tbsp fresh parsley, chopped1-1/2 tsp crushed red pepper flakes1 tsp paprika3 Tbsp tomato sauce
Directions
1. Heat a large pot of water until boiling. Cook cod for 5 minutes; drain and cool, leaving cod in large pieces. Set aside.

2. Preheat oven to 375 degrees F (190 degrees C).

3. In an 8x11 casserole dish, layer half the potato slices, all of the cod, and all of the onions. Top with remaining potato slices. In a small bowl, mix together olive oil, garlic, parsley, pepper flakes, paprika, and tomato sauce. Pour evenly over casserole.

4. Bake in preheated oven for 45 minutes, or until potatoes are tender.

    I do this a lot and I add calamata olives and oregano to the mix (a Brazilian thing to do that makes it even more yummy! Try it out!) and I decorate it with boiled eggs sliced and lightly cooked in the oven to give it some color at the end. Thanks for posting this amazingly delicious dish! And - 8/13/13
