1.5 cups flax seed; whole1 cup instant oats1.5 cups whole wheat pastry flour1 cup whey low brown (or light brown sugar)1 cup whey low D (or sugar sub of your choice)2 tbsp. baking powder2 tbsp. cinnamon.5 cup eggbeaters.33 cup coconut oil1 cups applesauce1 tbsp. pure vanilla extract1 cup yogurt2 tbsp. molasses, blackstrap1 cup raisins
Preheat oven to 350; spray non-stick muffin tins with pam for baking
Crush flax seeds to flour like consistency in a coffee mill; add remaining dry ingredients and mix until well blended.
Except for the raisins, Blend the remaining ingredients well, add to dry ingredients and mix until blended, stir in raisins.
Makes 12 muffins (each muffin contains 1.5 tbsp. flax seed)
