Vegetarian Orange Bulgar & Beans

2 T. butter1 c. sliced fresh mushrooms1/2 c. diced carrot1/2 c. diced celery1 c. uncooked bulgar wheat1 c. orange juice1 c. vegetable broth (I used chicken)1 T. lemon juice1/2 c. raisins2 T. chopped fresh cilantro2 T. chopped green onions2 T. chopped fresh parsely1/2 tsp onion powder1/2 tsp ginger powder (may use fresh)salt and pepper (to taste)1/2 c. toasted slivered almonds
Melt butter in large skillet. Add mushrooms and cook until most of moisture is gone and mushrooms are browned. Add garlic, carrots, and celery. Brown slightly. Add bulgar wheat and cook 3-5 minutes. Add orange juice, broth, black beans, and raisins. Bring to a boil, reduce heat to low, and cover. Cook 15-20 minutes until most of liquid is absorbed. Add remaining ingredients except almonds. Cook until all liquid is absorbed. Top with slivered almonds.
