Crustless Spinach Quiche

Ingredients

1 Medium onion, diced3 C Fresh baby spinach, coarsely chopped2 Large eggs½ C Egg Beaters, Original½ C All purpose white flour½ Tsp baking powder¼ Tsp saltDash of cayenne pepper, to taste1 1/3 C Almond Breeze Original Almond Milk½ C 2% cheddar cheese, shredded 4 oz Live Active 2% Milkfat Cottage Cheese
1.Preheat oven to 400˚
2.Lightly spray 10” quiche pan or pie plate with PAM spray
3.In a medium frying pan, sauté onion with olive oil over medium-high heat until translucent.
4.Add spinach and cook just until wilted
5.Set aside and cool while you prepare the quiche batter
6.In a large mixing bowl, whisk together eggs and almond milk. Add the cottage cheese and blend.
7.Whisk in flour, baking powder, salt, and cayenne pepper to taste
8.Mix in the spinach/onion mixture
9.Add MOST of the cheddar cheese, reserving approximately 1 tablespoon for the top
10.Pour mixture into prepared baking dish
11.Top with remaining cheddar cheese
12.Bake for 30 minutes or until center is set and the edges are golden brown
13.Let set for 5 minutes
14.Slice and enjoy!!
*I took the photo while in the oven because it rose beautifully, like a soufflé and I knew that it would deflate once I removed it (which it did).
