1 cup sugar3/4 cup butter, softened1 beaten egg2-1/4 cup flour4 tsp baking powder1 cup soy milk2 cups blueberries
Oven at 375F. Spray the pan or grease it. Cream sugar and butter. Add egg, flour, b. powder and soy milk. Beat well; add berries. Put in to pan. Bake 20-25 min. Makes 14 muffins.
