Fresh Summer Vegetables Stir Fry with Rotini

Onions, raw, 1 medium, choppedShallots, 2 tbsp choppedGarlic, 3 cloves, mincedSwiss Chard, 1 cup, choppedPeppers, sweet, red, fresh, 1 medium, choppedSummer Squash, 1 cup, slicedZucchini squash, 1 small. choppedExtra Virgin Olive Oil, 2 tbspLemon JuiceParmesan Cheese, grated, 2 tbspBarilla Plus Rotini 4 oz, cookedSalt, 2 dashesPepper, black, 2 dashes
In a large pan or skillet
Saute onions and shallots in olive oil for 2 - 3 minutes on medium, high heat
Add garlic and red bell pepper and saute for 3 - 4 more minutes
Add Swiss chard and 1/4 cup of water. Cover pan and turn down to low. Season vegetables with salt and pepper. Steam for 10 minutes
Stir in rotini
Spritz with lemon and add Parmesan cheese.
Serve and Enjoy!
