LB's Easy Beef Stew

Ingredients
3/4 C onion, chopped15 baby carrots, cut into bite-sized pieces4 stalks celery, sliced3 medium potatoes, cut into 1/2" cubes (peel them if you must, I like them skins-on)1/2 T. olive oil9 oz. leftover roast beef, chopped w/ visible fat removed1 can (14 oz) Swanson Reduced Sodium Beef Broth1 1/2 C water1/4 - 1/2 T. pepper, to taste
Directions
In a 3-Quart pan, saute the onion, celery and carrots in the oil until the onions are translucent. Add the roast beef, broth, water and pepper. Bring to a boil, simmer 5 minutes. Add the potatoes and bring back to a boil. Simmer for 25 minutes and serve.

Makes 6 1-cup servings.
