Greek Chicken & Rice

Ingredients
One 6 oz. package Farmhouse® Rice Pilaf1/2 cup diced scallions1/2 cup diced red bell pepper1 Tablespoon grated lemon rind3 cloves garlic, minced1 Tablespoon butter or margarine1 lb. boneless, skinless chicken, diced2 cups water1/4 teaspoon ground cumin (optional)One 10 oz. package frozen chopped spinach, thawed and squeezed dry1 Tablespoon chopped fresh dill or 1 teaspoon dry dill2 Tablespoons chopped fresh parsley2 Tablespoons lemon juice1/4 cup crumbled feta cheese
Directions
1.In large skillet, sauté scallions, red pepper, lemon rind and garlic in butter.
2.Add chicken and cook until chicken is no longer pink.
3.Add water, cumin, rice and contents of seasoning packet; bring to boil.
4.Reduce heat, cover and simmer 15 minutes.
5.Add spinach and continue to cook 5-10 minutes longer or until liquid is absorbed.
6.Stir in dill, parsley and lemon juice.
7.Before serving, top with crumbled feta cheese.

Serving Size: Makes about five 1 & 1/2 cup servings
