Turkey Stuffed Cabbage Leaves

Ingredients
8 large cabbage leaves12 oz uncooked ground turkey breast1/2 cup diced onion1/2 cup cooked brown rice1 large egg1/2 teaspoon of garlic powder1/4 teaspoon of cinnamon1/4 teaspoon of pepper28 oz can or no salt tomatoes, diced1 cup reduced sodium chicken broth
Directions
Remove 8 outer leaves. Place in large pot. Cover with water. Boil until leaves are pliable. Drain. When cool, cut the thick vein out at the bottom.
2. In a bowl, combine turkey, onion, rice, egg, garlic, cinnamon, pepper and mix well.
3. Place a small amount of mixture in the center of each leaf. Fold the sides of the leaves in and then roll up tightly from one end to the other, making sure filling is fully covered by leaf.
4. Pour a small amount of tomatoes into stock pot so the thin layer covers bottom of pot Place cabbage rolls in the pot, packing them tightly to prevent opening during cooking. Pour in remaining tomatoes and broth. Set pot over Medium-High heat and simmer. Reduce heat to low, cover pot, simer 45 more minutes. Remove from heat and serve. Yields 2 stuffed leaves and 1/4 c sauce per serving.
