Oven Baked CRISPY Chicken Fingers

Ingredients
Cut chicken into stripsCombine 1 TBSP light mayo, 1 TBSP dijon mustard, egg white and 1TBSP of water.Combine Panko Bread crumbs, 1 TBSP of olive oil and 1 tsp of cayanne pepper.Dip chicken in egg mixture and then dip into panko mixtureBake until golden on each side in 400 degree oven
Directions
Preheat oven to 400 degrees. Place a cooling rack over a cookie sheet and spray with olive oil spray or non-stick spray. Place coated chicken on wire rack. Cook for 5-10 minutes on each side till golden on each side. Flip and cook second side.
