Bob's GF Mighty Tasty Muffins

Ingredients
2 Tbsp BRM Mighty Tasty GF Hot Cereal (dry)2/3 c rice milk (cow/soy or almond)*1 Tbsp apple cider vinegar1 lg egg1/3 c molasses1 tsp vanilla extract3/4 c BRM GF garbanzo & fava flour**1/2 c BRM potato starch1/4 c BRM tapioca starch***1/3 c brown sugar, packed1 tsp baking powder1/2 tsp baking soda1 tsp xanthan gum1/4 tsp nutmeg1/2 tsp cinnamon1/4 tsp ground ginger1/4 tsp allspice1/2 tsp salt
Directions
Preheat oven to 350. In a large bowl, combine the first six ingredients. Let stand for 15 minutes while cereal softens. In a seperate bowl, combine remaining ingredients. Add the dry mixture to the liquid ingredients. Stir until just moistened. Spoon batter into greased or lined muffin tins and bake for about 20 minutes or until the tops are firm.

    these were very good for being GF. i have been cooking GF for 5 years and have yet to find anything that tastes like wheat. there is less sugar in these than most recipes which i am ok with. it lets the flavors of the spices come out which are mild. muffins are dense but not rocks. - 2/3/14
