Light Key-Lime Pudding

Ingredients
1 ½ cups fat free plain soymilk2 tsp vanilla1/2 cup sugar1/4 cup cornstarch1/4 cup Key lime juice1/2 teaspoon finely grated lime peel2 cups thawed fat-free whipped topping (optional)
Directions
In 1-quart saucepan stir together soymilk, sugar, cornstarch, Key lime juice and lime peel with wire whisk until cornstarch is dissolved.
Heat to just under boiling, stirring constantly.
Cook 1 minute, continuing to stir.
Remove from heat and cool.
Cover surface of pudding mixture with plastic wrap to prevent skin from forming.
Refrigerate until cold. Serve with whipped topping if desired.

    I ended up with a soupy mess. The pudding never set and I even used more corn starch. Something is missing. Most recipes call for eggs or sweetened condensed milk. - 4/18/13
