Spinach Fritatta Twists

Ingredients
1-1/2 c Original Egg Beaters5 oz Birds Eye Chopped Spinach, thawed and drained well1/2 c Light Plain Silk Soymilk2 sticks Polly-O Twists, cut into 12 pieces
Directions
Heat oven to 350*
Spray 12 count muffin pan with EVOO non-stick.
Beat egg and milk, add drained spinach. Pour into muffin pan (3 Tbsp each). Add 1 piece cheese in each tin. Bake 20-25 minutes. Remove from pan immediately. Serve or freeze - does not store well in fridge.
